The olive cannot be consumed as it is on the tree, it has to be processed. (Olive, brine or seasoning)
Arbequina table olives
The ecological agrarian produced arbequina olive , due to the special characteristics of its cultivation, is usually smaller, with a lower pulp/stone ratio, the fat yield being the same as in those of traditional cultivation, but its vegetable water content being lower.
Ingredients: Certified ecological-agriculture arbequina olives, water, sea salt and aromatic herbs.
Preparation: Arbequina olives kept in brine for one year.
Recommendation: They do not need to be stored in the fridge once opened.
Out of the fridge, it is normal for a white film to appear on the surface. This is removed by washing the olives to be eaten with a little water.
To reduce the flavour of the olives, wash with water.
Jar available: Drained weight 200 g.
Arbequina olive paste.
Ingredients: Certified ecological-agriculture arbequina olives, oil and aromatic herbs.
Preparation: The stones are removed from arbequina olives soaked in brine, then the olives are chopped and seasoned with aromatic herbs.
Recommendation: Once opened, store in the fridge after covering the surface (of the remaining olives) with oil.
For canapés, salads, with pasta, etc.
