Arbequina olive paste
Ingredients: Arbequina olives, oil and aromatic herbs.
Preparation: The stones are removed from arbequina olives soaked in brine, then the olives are chopped and seasoned with aromatic herbs.
Recommendation: Once opened, store in the fridge after covering the surface (of the remaining olives) with oil.
For canapés, salads, with pasta, etc.
Jar available: Net weight 100 g.
Arbequina table olives
Table olives are often harvested unripe, when the stone is already hard, the hard skin is still green and the consistency of the pulp is reducing.
The fruit must be picked from the branches one by one, carefully and delicately, to avoid causing any damage or exerting any pressure which may harm their aspect and quality, and are placed in thin layers in special containers.
Ingredients: arbequina olives, water, sea salt and aromatic herbs.
Preparation: Arbequina olives kept in brine for one year.
Recommendation: They do not need to be stored in the fridge once opened.
Out of the fridge, it is normal for a white film to appear on the surface. This is removed by washing the olives to be eaten with a little water.
To weaken the flavour of the olives, wash with water.
Jar available: Drained weight 350 g.
